Will – It’s been way too long since I have posted anything to this blog and I apologize! It has also been far too long since I have spent any time with my mother-in-law’s dad…Grandpa B. He lives in another city across the great sea of fields, and neither of us get away very often. He and grandma decided to make the road trip here this summer and they let us have them to our home for the day and night. In fact they’re sleeping in the room right above me as I type.
What an awesome opportunity I have to be able to visit with this part of my family. To sit and spend some quality time with this man of such wisdom and knowledge is such a blessing. How often do we take for granted the years that so quickly pass us by? How often do we neglect the people that truly care for us and wish only the very best for us? I’m moved by the love that pours out from all my grandparents, and most recently by Grandpa B. We love you all very much.
Will – I had the opportunity to take a drive through the country side of southern Manitoba yesterday on a farm machine that we had just purchased. The drive was spectacular as the road twisted an turned through the Pembina Escarpment, remnants of post glacial moraines…wow, how’s that for a history lesson. Anyways, here are some of the moments I captured.
Cut the leaves off and leave them in the garden, then wash and trim the hard white ends off
Dice into 1/2″ chunks
Grease a 9×13 cake pan, cover the bottom with the diced rhubarb and add 3/4cup sugar over top. Use a lot of rhubarb…maybe 3-4 cups
Take approx 1.5-2 cups of marshmallows
To make the batter, mix 1/2 cup softened butter with 1 cup of sugar first. Add 2 whole eggs and whip til this mixture is smooth. Then add 1.75cup of flour, 3tsp of baking powder, 1tsp vanilla and 1/4 cup of milk.
Beat til smooth
Spread down the center of the pan because it’s extremely sticky and this makes it easier to cover the whole area
Bake at 350 for about 30-40 minutes
After you take it out, flip it upside down while it’s still warm onto a serving plate. Serve with whipped cream. And I can’t believe that I FORGOT to take a picture of the finished product! AHHHH I guess I was too busy eating…
Will – Here in Winnipeg we get our fair share of winter storms. They never last much more than a day, but I’m always amazed at how daily activities and commerce continues to persist and endure through them. As bad as they can be, when they’re over there is always beauty to be seen. The wind has blown the snow so that it sticks to everything! This photograph is taken of the front of my parents home just south of Winnipeg.
